3 Healthy Slow Cooker Recipes Under 300 Calories

Plenty of people who are in a weight loss journey count the calories of the food they eat daily. This way, it will be easier for them to track their progress. If you’re trying to shed off some pounds but still want to enjoy home cooked meals, bring out your crock pot and cook these healthy slow cooker recipes that are only equal to 300 calories or less.

Try these healthy slow cooker recipes which are good for weight loss:

Sweet Hazelnut Oatmeal

What you need:

  • 2 apples, peeled and sliced into 1/2-inch cubes
  • 1 1/2 cups fat-free milk
  • 1 1/2 cups water
  • 1 cup steel-cut oats
  • 1/4 cup maple syrup
  • 2 tablespoons hazelnuts, chopped
  • 2 tablespoons brown sugar
  • 1 1/2 tablespoons butter, softened
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon salt

In a saucepan over medium high heat, bring milk and water to a boil. Pour mixture in a crockpot then add apples, oats, brown sugar, butter, ground cinnamon and salt. Stir then cover and cook on low for 7 hours. When ready, transfer to a serving bowl then top with maple syrup and hazelnuts.

Slow Cooked Balsamic Greens

What you need:

  • 3 bacon slices
  • 2 cloves garlic, minced
  • 1 bay leaf
  • 1 can fat-free lower-sodium chicken broth
  • 2 cups chopped fresh collard greens
  • 1 cup chopped onion
  • 3 tablespoons balsamic vinegar
  • 1 tablespoon honey
  • 1/4 teaspoon salt

Cook bacon to a crisp in a pan over medium-high heat. Remove from pan, crumble and set aside. In the same pan with the bacon drippings, cook onion until tender, about 5 mins. Stir in collard greens and cook until tender. Place mixture in a slow cooker along with bay leaf, garlic and broth. Cover and cook for 3 to 4 hours on low. Meanwhile, combine balsamic vinegar and honey in a bowl. When greens are ready, stir in balsamic mixture just before serving. Top with crumbled bacon.

Black Bean and Sweet Potato Chili

What you need:

  • 3 medium sweet potatoes, sliced into bite-size pieces
  • 1 white onion, diced
  • 2 cups chunky salsa
  • 2 cups black beans with salt
  • 2 cups vegetable stock
  • 2 cups water
  • 1 tablespoon vegetable oil
  • Salt and pepper

Heat vegetable oil in a pan and cook onion until tender, season with salt and pepper. Add sweet potato slices and cook for 3 minutes. Place mixture in a slow cooker then stir in salsa, black beans, vegetable stock and water. Cover and cook for 3 to 4 hours on low until sweet potatoes and black beans are tender.
