3 Easy Chicken Crock Pot Dinners That Will Not Disappoint

Chicken is inexpensive, versatile and available all year round. Although it can be fulfilling on its own, it can be used in millions of recipes from soups, stews, pasta and even rice meals. It’s healthy, too! Most of all, chicken is very easy to prepare and cook, especially in a slow cooker.

Here are 3 easy chicken crock pot dinners you have to try:

Crock Pot Chicken Parmesan

What you need:

  • 6 boneless and skinless chicken breasts
  • 2 cans condensed cream of mushroom soup
  • 1 1/2 cups milk
  • 1 cup converted long-grain white rice
  • 1/4 cup grated Parmesan cheese for topping
  • 6 tablespoons butter
  • 1 1-ounce package dry onion soup mix
  • Salt and ground black pepper to taste

In a medium bowl, combine condensed cream of mushroom soup, milk, rice and soup mix. Place chicken breasts in a slow cooker and put 1 tablespoon butter on top of each. Pour mushroom soup mixture all over chicken, season with salt and pepper then sprinkle with Parmesan. Cover and cook for 8 to 10 hours on low.

Slow Cooked Chicken Stroganoff

What you need:

  • 4 boneless and skinless chicken breast halves, cubed
  • 1 can condensed cream of chicken soup
  • 1 cup cream cheese
  • 1/8 cup margarine
  • 1 small package dry Italian-style salad dressing mix

In a slow cooker, combine chicken, margarine and salad dressing mix. Cover and cook on low for 5 to 6 hours. When ready, stir in cream of chicken soup and cream cheese then cook for 1 1/2 hours more on high. Best served on top of cooked pasta or rice.

Thai-Style Crock Pot Chicken Thighs

What you need:

  • 1 kilogram skinless chicken thighs
  • 3/4 cup light coconut milk
  • 3/4 cup hot salsa
  • 1/2 cup chopped peanuts for topping
  • 1/4 cup chunky peanut butter
  • 2 tablespoons chopped cilantro for topping
  • 2 tablespoons grated fresh ginger
  • 2 tablespoons lime juice
  • 1 tablespoon soy sauce
  • 1 teaspoon white sugar

In a large bowl, mix together coconut milk, salsa, peanut butter, ginger, lime juice, soy sauce and white sugar. Stir to combine ingredients well. Place chicken thighs in a slow cooker and pour coconut milk mixture all over it. Mix to coat chicken with sauce. Cover and cook for 8 to 9 hours on low. When ready, sprinkle with cilantro and garnish with chopped peanuts.
